Chocolate Coconut Power Orbs

Have I got a yummy treat for you this morning! Remember how I said that I‘d be doing a lot more creating in the kitchen since I’m living in the Vista House? Well, having access to a fully equipped kitchen + a lot of people to eat whatever yummy creation I make is definitely already prompting me to cook a lot more!

This recipe is adapted from the lovely Angela at Oh She Glows. I constantly drew upon Angela’s story and wisdom for hope within my own healing process. Her’s was the first blog that I ever ‘followed,’ and I still have it bookmarked and check it daily! Her food is inspired, delicious, and super feel-good healthy.

I enjoyed some of these tasty little guys this morning with breakfast this morning!

Chocolate Coconut Power Orbs

1/2 cup raw cashews
3/4 cup pitted dates
1/4 cup prunes
2 1/2 tablespoons cocoa powder
1/4 cup unsweetened coconut (plus more for rolling)
1/4 cup almonds
1/2 tsp cinnamon
1/4 tsp sea salt
3 tbsp maple syrup
1 tbsp chunky natural peanut butter
1/2 tsp vanilla

Process the cashews in a food processor until crumbly. Don’t leave them in too long–we don’t want cashew butter!

Add the pitted dates and prunes. Process until combined and sticky. Add in the rest of the ingredients, minus the almonds, and process until all the ingredients come together.

Pulse in the almonds to your level of desired nut-texture.

Form into balls and roll in coconut. Store in freezer or fridge.

First Day on Farm (2)

So, yesterday I finished with my visit to the hogs. Afterwards, we cleaned the onions we’d just picked.

Even though I’d had my super duper delicious breakfast, I was ravenous by 10:00. I’m going to have to eat more in the mornings before I go to work! I ate lunch at one after washing several batches of spinach and salad mix. Throughout the course of the day, I think I washed about 60 pounds. This was my view at lunch:

For lunch, I had brought some food because I wasn’t sure what the situation would be. I ended up eating some food Amy, one of the owners, prepared, as well as everything I had brought! It was a hungry, food-filled day yesterday. This is the quinoa dish they prepared, and it was sooooo tasty.

Roddy, another owner, showed me several of the meat products they’ve made, including some sausages. I told him If I eat meat this month, it will be the first time in over four years. He was quite excited that I’m open to trying some Greenbrier meat! I am completely comfortable with the way the animals live and are cared for. Ten minutes after this conversation, a concerned Amy came to tell me that she didn’t know I was vegetarian, and that the delicious quinoa dish had their chicken stock in it. Probably the best way to get my system acclimated, I assured her.

After lunch consisted of more washing and packaging!

 All in all, it was a great first day. It wore me out though–I was exhausted and ready for more food by the time I got home.

First Day at the Farm!

Well, I started my day bright and early this morning! I was expected at the farm at 7:30, so I had to leave the house by 7:00 and be up at 6:30.

Because I was going to be working all day, I had to have a big breakfast to fuel me up. I made myself a delicious breakfast burrito with a quinoa, corn, black bean mixture I made yesterday, leftover sweet potatoes from a house dinner last night, cilantro, and daiya cheese. Check out this beauty: 

When I got to Greenbrier I was thrown right into the thick of things! They have their first farmer’s market tomorrow, so today was going to be a busy day. Megan, another intern working and living on the farm, took me out to water the plants in the greenhouse and harvest spinach.

Beautiful, huh? That’s the garden!

Picking the spinach. I’m pretty sure the people I was working with were really amused that I kept pulling out my camera!

Then we went to visit the hogs. Pigs were my favorite animal as a child, so I was pretty excited!

Look at these little guys! So curious. I’ve read that pigs have the intelligence level of three year old children–pretty crazy! They rank fourth on the list: humans, primates, dolphins, then our porcine friends.

Sweet Friendship: Receiving Notes of Gratitude

So, my last post I talked about how I was planning on writing thank you notes to people who have been significant to my life and may not realize it. Mostly, teachers came to mind, and I’ve written several of my letters (but haven’t postmarked them yet.)

The day after I decided to focus on gratitude in the form of handwritten letters, I received this from a very dear friend:

We’ve only gotten close this semester, but there is a kindred spirit within her. She is beautiful, wise, affirming. She is the first friend I seek out when I am fighting past demons, and her words always bring me inner calm and help me wage the storms. I will be writing about her wisdom in a later post. Receiving a letter helped affirm the project I am doing this week: her words were touching, and I will treasure them. Knowing the joy I felt reading her card, I’m excited to send my letters to other people.

She wrote, “I chose this stationary for you because birds represent to me freedom, grace, and beauty, and  believe you have an can achieve these things. You have beauty, grace, and strength, and through Christ and love you can achieve freedom.” 

Since I just moved from my dorm to the Vista House, I was packing up several cards and letters I’ve received this year. Here are some of my favorites that will hopefully encourage you to write those you love and those who have impacted you, and brighten their days!

This one is from Archana, the beautiful young woman I sponsor through Compassion International. She’s actually about a week and a half older than I am!

This comes from my mother and is a thank you note for her birthday gift. The inside says: God is able to make all grace abound in you, from II Corinthians 9:8.

  My sister Megan has a gift. I’ve probably received more letters and cards from her than from anyone else–she is so thoughtful and affirming. Included with this card was some wonderful Toms toothpaste with propolis. I used to guest blog for her business, and did a focus on bees.

 This is from the girl I nannied for my last two years of high school. She is so sweet and mature, and this letter MADE MY WEEK!
